Ingredients
- 1 flour tortilla
- 2 chicken tenders, cooked and shredded
- 1/2 cup shredded cheddar cheese
- 1 green chile, diced
- 1 egg
- Saltines
- Tomato soup
- Sour cream
Instructions
- In a bowl, mix the shredded chicken, cheddar cheese, and diced green chile.
- Place the flour tortilla on a flat surface and spread the chicken and cheese mixture over half of the tortilla.
- Fold the tortilla in half to cover the filling, creating a half-moon shape.
- In a skillet over medium heat, cook the quesadilla for 2-3 minutes on each side until golden and crispy.
- In a separate pot, heat the tomato soup until hot.
- In a small bowl, beat the egg.
- Crush the saltines into fine crumbs on a plate.
- Dip the cooked quesadilla in the beaten egg, then coat it with the crushed saltines.
- Serve the quesadilla with a dollop of sour cream and a side of hot tomato soup.
