Ingredients

  • 1 flour tortilla
  • 2 chicken tenders, cooked and shredded
  • 1/2 cup shredded cheddar cheese
  • 1 green chile, diced
  • 1 egg
  • Saltines
  • Tomato soup
  • Sour cream

Instructions

  1. In a bowl, mix the shredded chicken, cheddar cheese, and diced green chile.
  2. Place the flour tortilla on a flat surface and spread the chicken and cheese mixture over half of the tortilla.
  3. Fold the tortilla in half to cover the filling, creating a half-moon shape.
  4. In a skillet over medium heat, cook the quesadilla for 2-3 minutes on each side until golden and crispy.
  5. In a separate pot, heat the tomato soup until hot.
  6. In a small bowl, beat the egg.
  7. Crush the saltines into fine crumbs on a plate.
  8. Dip the cooked quesadilla in the beaten egg, then coat it with the crushed saltines.
  9. Serve the quesadilla with a dollop of sour cream and a side of hot tomato soup.
