Chicken and Potato Bake

This chicken and potato bake recipe is a perfect dish for a family dinner. It is easy to prepare and packed with flavor!

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 large potatoes, peeled and cut into cubes
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease a large baking dish with cooking spray or butter.
  3. In a small bowl, whisk together the olive oil, minced garlic, dried thyme, paprika, salt, and black pepper.
  4. Arrange the cubed potatoes in a single layer in the greased baking dish.
  5. Brush the chicken breasts with the olive oil mixture and place them on top of the potatoes.
  6. Pour the remaining olive oil mixture over the chicken and potatoes, making sure everything is evenly coated.
  7. Bake for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.
  8. Garnish with chopped fresh parsley and serve hot.
