Chicken and Potato Bake

This chicken and potato bake recipe is a perfect dish for a family dinner. It is easy to prepare and packed with flavor!
Ingredients
- 4 boneless, skinless chicken breasts
- 4 large potatoes, peeled and cut into cubes
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Grease a large baking dish with cooking spray or butter.
- In a small bowl, whisk together the olive oil, minced garlic, dried thyme, paprika, salt, and black pepper.
- Arrange the cubed potatoes in a single layer in the greased baking dish.
- Brush the chicken breasts with the olive oil mixture and place them on top of the potatoes.
- Pour the remaining olive oil mixture over the chicken and potatoes, making sure everything is evenly coated.
- Bake for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.
- Garnish with chopped fresh parsley and serve hot.
