Chicken and Potato Bake

This delicious and hearty Chicken and Potato Bake is perfect for a family dinner. The combination of tender chicken, crispy potatoes, and a blend of savory spices will have everyone coming back for seconds. This recipe is adjusted to serve 4 people.
Ingredients
- 4 medium potatoes, peeled and sliced
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup chopped fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Lightly grease a large baking dish with a little olive oil.
- Arrange the sliced potatoes in an even layer at the bottom of the baking dish.
- Drizzle 1 tablespoon of olive oil over the potatoes and season with salt, pepper, garlic powder, onion powder, paprika, and dried thyme. Toss to coat evenly.
- Place the chicken breasts on top of the potatoes.
- Drizzle the remaining tablespoon of olive oil over the chicken breasts and season them with a little more salt, pepper, garlic powder, onion powder, paprika, and dried thyme.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the potatoes are tender.
- Remove the aluminum foil and sprinkle the shredded cheddar cheese over the chicken and potatoes.
- Return the dish to the oven and bake, uncovered, for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it rest for a few minutes.
- Garnish with chopped fresh parsley, if desired, before serving.
