Chicken and Rice Delight

This Chicken and Rice Delight is a simple yet flavorful dish that's perfect for a family dinner. With tender pieces of chicken and perfectly cooked rice, this meal is sure to satisfy everyone's taste buds.
Ingredients
- 2 cups of rice
- 4 boneless, skinless chicken breasts
- 2 tablespoons of olive oil
- 1 medium onion, diced
- 3 cloves of garlic, minced
- 1 bell pepper, diced
- 1 cup of chicken broth
- 1 cup of water
- 1 teaspoon of paprika
- 1 teaspoon of cumin
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a medium pot, bring the chicken broth and water to a boil.
- Add the rice, cover, and reduce the heat to low. Let it simmer for 18-20 minutes or until the rice is fully cooked and the liquid is absorbed. Remove from heat and set aside.
- Season the chicken breasts with salt, pepper, paprika, and cumin.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken breasts to the skillet and cook for 5-7 minutes on each side, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion, minced garlic, and bell pepper.
- Sauté for 3-4 minutes, or until the vegetables are tender and the onions are translucent.
- Slice the cooked chicken breasts into strips.
- Add the cooked rice to the skillet with the vegetables and stir to combine.
- Place the chicken strips on top of the rice and vegetable mixture.
- Garnish with fresh parsley if desired.
