Chicken and Rice Stir Fry

This Chicken and Rice Stir Fry is a delicious and easy-to-make dish that is perfect for a quick weeknight dinner. The combination of tender chicken, fluffy rice, and savory onions creates a flavorful and satisfying meal.
Ingredients
- 500g chicken breast, cut into bite-sized pieces
- 2 cups cooked rice
- 1 medium onion, thinly sliced
Instructions
- Heat a large skillet or wok over medium-high heat. Add a tablespoon of oil and swirl to coat the pan.
- Add the chicken pieces to the hot pan and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
- In the same pan, add another tablespoon of oil and sauté the sliced onions until they are softened and slightly caramelized, about 5 minutes.
- Add the cooked rice to the pan with the onions and stir to combine. Cook for an additional 2-3 minutes, until the rice is heated through.
- Return the cooked chicken to the pan and stir to combine with the rice and onions. Cook for another 2-3 minutes to allow the flavors to meld together.
- Serve the Chicken and Rice Stir Fry hot, garnished with chopped green onions or cilantro, if desired.
