Chicken and Rice with Corn

A delicious and satisfying meal that combines tender chicken, fluffy rice, and sweet corn. This recipe is perfect for a family of four.
Ingredients
- 4 chicken breasts
- 2 cups rice
- 1 cup corn kernels
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 2 cups chicken broth
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Season the chicken breasts with salt, pepper, garlic powder, paprika, and dried thyme.
- Add the seasoned chicken breasts to the skillet and cook until browned on both sides, about 5 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the rice and corn kernels. Cook for 2 minutes, stirring occasionally.
- Add the chicken broth to the skillet and bring to a boil.
- Reduce the heat to low, cover the skillet, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, slice the cooked chicken breasts into strips.
- Once the rice is cooked, fluff it with a fork and add the sliced chicken on top.
- Cover the skillet again and let the chicken and rice sit for 5 minutes to allow the flavors to meld together.
- Serve the chicken and rice with corn hot and enjoy!
