Chicken and Rice with Corn

  • 4 chicken breasts
  • 2 cups rice
  • 1 cup corn kernels
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 cups chicken broth


  1. In a large skillet, heat the olive oil over medium heat.
  2. Season the chicken breasts with salt, pepper, garlic powder, paprika, and dried thyme.
  3. Add the seasoned chicken breasts to the skillet and cook until browned on both sides, about 5 minutes per side.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the rice and corn kernels. Cook for 2 minutes, stirring occasionally.
  6. Add the chicken broth to the skillet and bring to a boil.
  7. Reduce the heat to low, cover the skillet, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
  8. While the rice is cooking, slice the cooked chicken breasts into strips.
  9. Once the rice is cooked, fluff it with a fork and add the sliced chicken on top.
  10. Cover the skillet again and let the chicken and rice sit for 5 minutes to allow the flavors to meld together.
  11. Serve the chicken and rice with corn hot and enjoy!
