Chicken and Rice with Potatoes

This classic recipe combines tender chicken, fluffy rice, and crispy potatoes for a satisfying and flavorful meal. It’s perfect for feeding a hungry crowd!

Ingredients

  • 4 chicken breasts
  • 2 cups of rice
  • 4 potatoes
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of paprika
  • 1 teaspoon of dried thyme
  • 1 cup of chicken broth

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. In a large skillet, heat one tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for about 4 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add another tablespoon of olive oil and the minced garlic. Cook for about 1 minute, until fragrant.
  5. Add the rice to the skillet and stir to coat it with the garlic and oil. Cook for another minute, until the rice is slightly toasted.
  6. Pour in the chicken broth and add the paprika and dried thyme. Stir well to combine.
  7. Transfer the rice mixture to a baking dish. Place the chicken breasts on top of the rice.
  8. Peel and slice the potatoes into thin rounds. Arrange the potato slices around the chicken and rice in the baking dish.
  9. Cover the baking dish with foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes, or until the chicken is cooked through and the potatoes are crispy.
  11. Serve hot and enjoy!
