Chicken and Rice with Potatoes

This classic recipe combines tender chicken, fluffy rice, and crispy potatoes for a satisfying and flavorful meal. It’s perfect for feeding a hungry crowd!
Ingredients
- 4 chicken breasts
- 2 cups of rice
- 4 potatoes
- Salt and pepper to taste
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1 teaspoon of dried thyme
- 1 cup of chicken broth
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat one tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for about 4 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil and the minced garlic. Cook for about 1 minute, until fragrant.
- Add the rice to the skillet and stir to coat it with the garlic and oil. Cook for another minute, until the rice is slightly toasted.
- Pour in the chicken broth and add the paprika and dried thyme. Stir well to combine.
- Transfer the rice mixture to a baking dish. Place the chicken breasts on top of the rice.
- Peel and slice the potatoes into thin rounds. Arrange the potato slices around the chicken and rice in the baking dish.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the chicken is cooked through and the potatoes are crispy.
- Serve hot and enjoy!
