Chicken and Spinach Wrap

Ingredients
- 1 boneless, skinless chicken breast (pechuga de pollo)
- 1 egg (huevo)
- 1 cup fresh spinach (espinaca)
- 1 large wrap (tortilla)
Instructions
- Season the chicken breast with salt and pepper. In a skillet over medium heat, cook the chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from heat and let it rest for a few minutes before slicing.
- In the same skillet, add the fresh spinach and sauté for 1-2 minutes until wilted. Remove from heat.
- In a small bowl, beat the egg and pour it into the skillet. Cook over medium heat, scrambling until fully cooked. Remove from heat.
- On the large wrap, layer the sautéed spinach, sliced chicken, and scrambled egg.
- Fold in the sides of the wrap and roll it tightly from the bottom up to enclose the filling.
