Chicken and Vegetable Bake

Ingredients
- 500g chicken, diced
- 1 cup all-purpose flour
- 1 cup milk
- 1 cup bread crumbs
- Salt and pepper, to taste
- 1 cup cauliflower florets
- 1 cup spinach, chopped
- 1 cup green beans, trimmed and chopped
- 2 carrots, diced
- 2 celery stalks, diced
Instructions
- Preheat the oven to 180°C (350°F).
- Prepare the chicken: In a bowl, season the diced chicken with salt and pepper. Dredge the chicken pieces in flour, shaking off any excess.
- Sauté the chicken: In a large skillet, heat a tablespoon of oil over medium heat. Add the floured chicken and cook until golden brown on all sides, about 5-7 minutes. Remove from heat and set aside.
- Prepare the vegetables: In the same skillet, add a little more oil if needed. Sauté the carrots, celery, and cauliflower for about 5 minutes, until they start to soften. Add the spinach and green beans and cook for another 2-3 minutes until the spinach is wilted.
