This hearty and flavorful stew is the perfect comfort food for a cozy dinner with friends or family.

Ingredients

  • 4 chicken breasts, cut into cubes
  • 1 can of black beans, drained and rinsed
  • 1 cup of mixed vegetables (carrots, bell peppers, zucchini, etc.)
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat and sauté the onions and garlic until fragrant.
  2. Add the chicken cubes to the pot and cook until they are browned on all sides.
  3. Stir in the cumin and paprika, then add the mixed vegetables and cook for a few minutes.
  4. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 20 minutes.
  5. Add the black beans to the pot and continue to simmer for another 10 minutes.
  6. Season with salt and pepper to taste.
  7. Serve the stew hot, garnished with fresh cilantro.
