Chicken and Vegetable Bean Stew

This hearty and flavorful stew is the perfect comfort food for a cozy dinner with friends or family.
Ingredients
- 4 chicken breasts, cut into cubes
- 1 can of black beans, drained and rinsed
- 1 cup of mixed vegetables (carrots, bell peppers, zucchini, etc.)
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat and sauté the onions and garlic until fragrant.
- Add the chicken cubes to the pot and cook until they are browned on all sides.
- Stir in the cumin and paprika, then add the mixed vegetables and cook for a few minutes.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 20 minutes.
- Add the black beans to the pot and continue to simmer for another 10 minutes.
- Season with salt and pepper to taste.
- Serve the stew hot, garnished with fresh cilantro.
