Chicken Breast and Bread Casserole Recipe
What Started it all:

Preheat the oven to 375°F.
Ingredients
- 4 chicken breasts, boneless and skinless
- 1 loaf of bread, cut into 1 inch cubes
- 2 cups of chicken broth
- 1 onion, chopped
- 3 garlic cloves, minced
- 1/2 cup of melted butter
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375°F.
- In a skillet, heat up the olive oil over medium heat, then add the onions and garlic, and cook until they are softened and lightly browned.
- Add the chicken broth, thyme, rosemary, salt and pepper to the skillet, and let it simmer for a few minutes.
- While the broth is simmering, place the bread cubes in the bottom of a casserole dish, and pour half of the melted butter on top.
- Layer the chicken breasts on top of the bread, then pour the broth mixture over the chicken.
- Lastly, pour the remaining melted butter over the top of the casserole dish.
- Cover the dish with foil, and bake in the oven for 30 minutes.
- Remove the foil, and bake for an additional 15 minutes or until the chicken is cooked through and the bread is golden brown.
- Let the casserole cool for 5-10 minutes before serving.
