Chicken Breast and Bread Casserole Recipe

Preheat the oven to 375°F.


  • 4 chicken breasts, boneless and skinless
  • 1 loaf of bread, cut into 1 inch cubes
  • 2 cups of chicken broth
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1/2 cup of melted butter
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper, to taste


  1. Preheat the oven to 375°F.
  2. In a skillet, heat up the olive oil over medium heat, then add the onions and garlic, and cook until they are softened and lightly browned.
  3. Add the chicken broth, thyme, rosemary, salt and pepper to the skillet, and let it simmer for a few minutes.
  4. While the broth is simmering, place the bread cubes in the bottom of a casserole dish, and pour half of the melted butter on top.
  5. Layer the chicken breasts on top of the bread, then pour the broth mixture over the chicken.
  6. Lastly, pour the remaining melted butter over the top of the casserole dish.
  7. Cover the dish with foil, and bake in the oven for 30 minutes.
  8. Remove the foil, and bake for an additional 15 minutes or until the chicken is cooked through and the bread is golden brown.
  9. Let the casserole cool for 5-10 minutes before serving.
