Ingredients
- 4 chicken breasts, boneless and skinless
- 2 cups broccoli florets
- 2 cups cooked rice (white or brown, your choice)
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon soy sauce (optional for a bit of zing)
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with paprika, salt, and black pepper. Make sure every inch is coated.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the seasoned chicken breasts to the pan. Sear them for about 6-7 minutes on each side until they’re golden brown and cooked through.
- Once the chicken is cooked, remove it from the pan and let it rest. In the same pan, add the remaining tablespoon of olive oil and toss in the minced garlic. Sauté it for about 30 seconds until fragrant.
- Add the broccoli florets to the pan. Stir them around for about 3-4 minutes until they’re bright green and tender-crisp.
- Slice the chicken and return it to the pan with the broccoli. Add the cooked rice and drizzle with soy sauce (if using) and lemon juice. Toss everything together until it’s well combined.
- Give it a taste! Need more salt? More lemon? Adjust it!
- Serve it hot, garnished with fresh parsley.
