This recipe combines tender chicken, fluffy rice, and savory ham for a delightful and hearty meal that will satisfy even the pickiest eaters. Get ready to impress your guests with this mouthwatering dish.
Ingredients
- 4 chicken breasts
- 2 cups of rice
- 8 slices of ham
- Salt and pepper to taste
- 2 tablespoons of olive oil
- 4 cups of chicken broth
- 1 tablespoon of butter
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken breasts to the skillet and cook for 4-5 minutes on each side until golden brown.
- Transfer the chicken breasts to a baking dish and top each breast with 2 slices of ham.
- In the same skillet, melt the butter over medium heat.
- Add the rice to the skillet and cook for 2-3 minutes, stirring occasionally.
- Pour in the chicken broth and bring to a boil.
- Reduce the heat to low, cover the skillet, and let the rice simmer for 15 minutes or until all the liquid is absorbed.
- Fluff the rice with a fork and season with salt and pepper to taste.
- Spoon the rice mixture around the chicken breasts in the baking dish.
- Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
- Remove the foil and broil for an additional 2-3 minutes to crisp up the ham.
- Garnish with fresh parsley and serve hot.
