Chicken Rice Noodle Stir-Fry

This delicious and flavorful stir-fry combines tender chicken, fluffy rice, and chewy noodles, all coated in a savory soy sauce. It's a perfect dish to satisfy your cravings!

Ingredients

  • 2 boneless, skinless chicken breasts, sliced into thin strips
  • 2 cups cooked rice
  • 200g rice noodles
  • 4 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 cup mixed vegetables (such as bell peppers, carrots, and snow peas), sliced
  • Salt and pepper to taste
  • Optional garnish: chopped green onions and sesame seeds

Instructions

  1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the chicken strips and cook until browned and cooked through, about 4-5 minutes. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the minced garlic and grated ginger. Cook for 1-2 minutes until fragrant.
  5. Add the mixed vegetables to the skillet and stir-fry for about 3-4 minutes until they are tender-crisp.
  6. Return the cooked chicken to the skillet and add the cooked rice and rice noodles. Stir everything together.
  7. Pour the soy sauce over the mixture and season with salt and pepper to taste. Stir-fry for an additional 2-3 minutes until everything is well combined and heated through.
  8. Remove from heat and garnish with chopped green onions and sesame seeds, if desired.
  9. Serve hot and enjoy!
