Chicken Rice Noodle Stir-Fry

chicken, rice, noodles, soy sauce.
This delicious and flavorful stir-fry combines tender chicken, fluffy rice, and chewy noodles, all coated in a savory soy sauce. It's a perfect dish to satisfy your cravings!
Ingredients
- 2 boneless, skinless chicken breasts, sliced into thin strips
- 2 cups cooked rice
- 200g rice noodles
- 4 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 garlic cloves, minced
- 1 teaspoon ginger, grated
- 1 cup mixed vegetables (such as bell peppers, carrots, and snow peas), sliced
- Salt and pepper to taste
- Optional garnish: chopped green onions and sesame seeds
Instructions
- Cook the rice noodles according to the package instructions. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the chicken strips and cook until browned and cooked through, about 4-5 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and grated ginger. Cook for 1-2 minutes until fragrant.
- Add the mixed vegetables to the skillet and stir-fry for about 3-4 minutes until they are tender-crisp.
- Return the cooked chicken to the skillet and add the cooked rice and rice noodles. Stir everything together.
- Pour the soy sauce over the mixture and season with salt and pepper to taste. Stir-fry for an additional 2-3 minutes until everything is well combined and heated through.
- Remove from heat and garnish with chopped green onions and sesame seeds, if desired.
- Serve hot and enjoy!
