- 400g canned chickpeas, drained and rinsed
- 250g fresh okra, trimmed and chopped
- 3 tablespoons peanut butter (smooth or crunchy)
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- Fresh coriander (cilantro) for garnish
- Juice of 1 lemon
Instructions
- Begin by chopping the onion, garlic, and okra. Drain and rinse the chickpeas thoroughly.
- In a large pan over medium heat, add the olive oil. Once hot, toss in the chopped onion and garlic. Sauté for about 5 minutes until softened and fragrant.
- Add the chopped okra to the pan. Stir and cook for another 5-7 minutes until the okra is tender but still vibrant in color.
