Chinese-Inspired Quinoa and Pumpkin Soup

Ingredients

Instructions

  1. Rinse the quinoa under cold water and set it aside.
  2. Peel and dice the pumpkin into small cubes.
  3. Pour the broth or stock into the pressure cooker.
  4. Add the diced pumpkin and rinsed quinoa into the pressure cooker.
  5. Close the pressure cooker and cook on high pressure for about 10 minutes.
  6. Release the pressure and carefully open the pressure cooker.
  7. Stir the soup and season with salt and pepper to taste.
