Classic Bacon and Garlic Scrambled Eggs

Ingredients

  • 8 large eggs
  • 8 slices of bacon
  • 4 cloves of garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Cook the bacon in a large frying pan over medium heat until crispy. Remove the bacon from the pan and set aside on a paper towel-lined plate to drain excess oil.
  2. In the same pan with the bacon drippings, add the minced garlic and cook for 1-2 minutes until fragrant.
  3. While the garlic is cooking, crack the eggs into a bowl and whisk until well combined. Season with salt and pepper.
  4. Pour the whisked eggs into the pan with the garlic and cook over medium-low heat. Stir continuously with a spatula to create soft curds.
  5. Once the eggs are almost cooked to your desired consistency, crumble the cooked bacon into the pan and stir to combine.
  6. Continue cooking for another minute or so until the eggs are fully cooked but still moist.
  7. Remove from heat and serve hot with toast or your favorite breakfast sides.
