Classic Chicken and Rice

A simple and delicious recipe for chicken and rice, perfect for a comforting meal for four people.


  • 4 chicken breasts
  • 2 cups of rice


  1. Start by preparing the rice. Rinse the rice under cold water until the water runs clear. Then, in a medium-sized saucepan, combine the rice with 4 cups of water. Bring to a boil over high heat, then reduce the heat to low, cover the pan, and let the rice simmer for about 15-20 minutes, or until all the water is absorbed. Fluff the rice with a fork and set aside.
  2. While the rice is cooking, let's tackle the chicken. Season the chicken breasts generously with salt and pepper on both sides.
  3. Heat a large skillet over medium-high heat and add a drizzle of olive oil. Once the oil is hot, carefully place the chicken breasts in the pan. Cook for about 6-8 minutes per side, or until the chicken is cooked through and nicely browned. Make sure the chicken reaches an internal temperature of 165°F (75°C). Remove the chicken from the pan and let it rest for a few minutes before slicing.
  4. Serve the cooked rice on a plate and top it with the sliced chicken breasts. You can also add some steamed vegetables or a side salad for a complete meal.
