Classic Roast Turkey with Onion Potatoes and Gravy

  • 1 whole turkey (about 12 pounds)
  • 2 onions, sliced
  • 4 large potatoes, peeled and quartered
  • Salt and pepper, to taste
  • 4 cups turkey or chicken broth
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour


  1. Preheat the oven to 325°F (165°C).
  2. Rinse the turkey inside and out, and pat dry with paper towels. Season the turkey generously with salt and pepper.
  3. Place the turkey on a roasting rack in a large roasting pan. Arrange the sliced onions around the turkey.
  4. In a separate bowl, toss the quartered potatoes with a drizzle of olive oil, salt, and pepper. Spread them out on a baking sheet.
