Classic Roast Turkey with Onion Potatoes and Gravy

Ingredients
- 1 whole turkey (about 12 pounds)
- 2 onions, sliced
- 4 large potatoes, peeled and quartered

Instructions
- Preheat the oven to 325°F (165°C).
- Rinse the turkey inside and out, and pat dry with paper towels. Season the turkey generously with salt and pepper.
- Place the turkey on a roasting rack in a large roasting pan. Arrange the sliced onions around the turkey.
- In a separate bowl, toss the quartered potatoes with a drizzle of olive oil, salt, and pepper. Spread them out on a baking sheet.
- Place both the roasting pan with the turkey and the baking sheet with the potatoes in the preheated oven. Roast the turkey for about 3 hours, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.

- Once the turkey is cooked, remove it from the oven and let it rest for at least 20 minutes before carving.
- While the turkey is resting, transfer the roasted potatoes to a serving dish.
