Classic Roast Turkey with Onion Potatoes and Gravy

This recipe is a classic roast turkey with a twist. The turkey is tender and juicy, complemented by the flavorful onion potatoes and rich gravy. It’s perfect for a special occasion or a hearty family meal.

Ingredients

  • 1 whole turkey (about 12 pounds)
  • 2 onions, sliced
  • 4 large potatoes, peeled and quartered
  • Salt and pepper, to taste
  • 4 cups turkey or chicken broth
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Rinse the turkey inside and out, and pat dry with paper towels. Season the turkey generously with salt and pepper.
  3. Place the turkey on a roasting rack in a large roasting pan. Arrange the sliced onions around the turkey.
  4. In a separate bowl, toss the quartered potatoes with a drizzle of olive oil, salt, and pepper. Spread them out on a baking sheet.
  5. Place both the roasting pan with the turkey and the baking sheet with the potatoes in the preheated oven. Roast the turkey for about 3 hours, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
  6. While the turkey is roasting, prepare the gravy. In a saucepan, melt the butter over medium heat. Add the flour and whisk until smooth. Cook for a few minutes until the mixture turns golden brown.
  7. Slowly whisk in the turkey or chicken broth, making sure there are no lumps. Bring the mixture to a simmer and cook until thickened, about 5 minutes. Season with salt and pepper to taste.
  8. Once the turkey is cooked, remove it from the oven and let it rest for at least 20 minutes before carving.
  9. While the turkey is resting, transfer the roasted potatoes to a serving dish.
  10. Carve the turkey and serve with the roasted onions, potatoes, and gravy.
