Coconut Edamame and Beet Stir-Fry

Edamame, Beet, coconut milk, frying pan


  • 2 cups edamame
  • 2 medium-sized beets, diced
  • 1 can coconut milk
  • 2 tbsp oil for frying


  1. Heat the frying pan over medium heat and add the oil.
  2. Add the diced beets to the pan and sauté until they are tender.
  3. Pour in the coconut milk and let it simmer for a few minutes.
  4. Toss in the edamame and stir-fry until they are heated through and coated with the coconut milk sauce.
