Cod with Mustard Mushroom Sauce in the Slow Cooker

This dish is simple but requires a bit of finesse. We’re going to make a beautiful cod with a mustard mushroom sauce that’s slow-cooked to perfection. It’s rich, it’s creamy, and it’s going to blow your socks off.
Ingredients
- 4 pieces of cod fillets (about 150g each)
- 300g mushrooms, sliced (button or cremini work brilliantly)
- 2 tablespoons Dijon mustard
- 200ml double cream
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prep the Slow Cooker: Plug in your slow cooker and set it to low.
- Sauté the Onions and Garlic: In a pan, heat the olive oil over medium heat. Toss in the onions and cook until they’re translucent, then add the garlic. Stir until fragrant.
- Add the Mushrooms: Throw in the sliced mushrooms and cook until they’re soft and golden. Season with a pinch of salt and pepper.
- Mix the Sauce: In a bowl, combine the Dijon mustard and double cream. Add the sautéed onion and mushroom mixture into this. Mix it well.
- Layer in the Slow Cooker: Place the cod fillets in the slow cooker, season them with salt and pepper, then pour the mustard mushroom sauce over the top.
- Cook: Cover the slow cooker and let it do its magic for 4 hours on low. No peeking!
- Serve: Once it’s done, gently plate the cod, spoon over the sauce, and sprinkle with fresh parsley.
