Coffee-Glazed Lamb Shanks with Spinach

As the winter chill sets in, there's nothing quite like a hearty, comforting dish to warm the soul. This recipe combines the rich flavors of lamb with the earthy sweetness of spinach, all wrapped up in a velvety coffee glaze. Perfect for a cozy night in with the ones you love.


  • 1.5 kg lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, peeled and chopped
  • 2 cloves garlic, peeled and minced
  • 1 cup fresh spinach leaves
  • 1 cup strong brewed coffee
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup beef broth


  1. Preheat the Instant Pot to 'Saute' mode. Add the olive oil and cook the onion until softened, about 5 minutes.
  2. Add the garlic and cook for an additional minute.
  3. Add the lamb shanks and brown on all sides, about 5 minutes.
  4. Add the coffee, tomato paste, thyme, salt, and pepper. Stir to combine.
  5. Add the beef broth and bring to a simmer.
  6. Close the Instant Pot lid and set the valve to 'Sealing'. Pressure cook on 'High' for 60 minutes.
  7. Let the pressure release naturally for 10 minutes, then quick-release any remaining pressure.
  8. Add the fresh spinach leaves and stir to combine. Serve hot.
