Coffee-Glazed Lamb Shanks with Spinach

Ingredients
- 1.5 kg lamb shanks
- 2 tablespoons olive oil
- 1 onion, peeled and chopped
- 2 cloves garlic, peeled and minced
- 1 cup fresh spinach leaves
- 1 cup strong brewed coffee
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 cup beef broth
Instructions
- Preheat the Instant Pot to 'Saute' mode. Add the olive oil and cook the onion until softened, about 5 minutes.
- Add the garlic and cook for an additional minute.
- Add the lamb shanks and brown on all sides, about 5 minutes.
- Add the coffee, tomato paste, thyme, salt, and pepper. Stir to combine.
- Add the beef broth and bring to a simmer.
- Close the Instant Pot lid and set the valve to 'Sealing'. Pressure cook on 'High' for 60 minutes.
- Let the pressure release naturally for 10 minutes, then quick-release any remaining pressure.
- Add the fresh spinach leaves and stir to combine. Serve hot.
This recipe makes 4 servings. You can serve with roasted vegetables or a side of cauliflower mash for a comforting, satisfying meal.
