This recipe is a delightful fusion of flavors, where the rich, bold taste of coffee meets the earthy sweetness of potatoes and the delicate crunch of bok choy.


  • 4 large potatoes, peeled and diced
  • 1 bunch of bok choy, cleaned and chopped
  • 2 tablespoons of olive oil
  • 1 cup of strong brewed coffee
  • 1 teaspoon of soy sauce
  • 1 teaspoon of maple syrup
  • Salt and pepper, to taste
  • 1/4 cup of chopped fresh parsley


  1. Instant Pot Preparation: Press the 'saute' button on the Instant Pot and heat the olive oil. Add the diced potatoes and cook until they're slightly caramelized.
  2. Add the chopped bok choy to the Instant Pot and cook until it's wilted.
  3. In a small bowl, whisk together the brewed coffee, soy sauce, and maple syrup. Pour the mixture over the potatoes and bok choy.
  4. Close the Instant Pot lid and set the valve to 'sealing'. Press the 'manual' or 'pressure cook' button and set the cooking time to 5 minutes at high pressure.
  5. Let the pressure release naturally for 5 minutes, then quick-release any remaining pressure.
  6. Open the Instant Pot and season with salt and pepper to taste.
  7. Garnish with chopped parsley and serve hot.
