Coffee-Glazed Short Ribs with Asparagus

Ingredients
- 4 pieces of short ribs
- 1 bunch of fresh asparagus
- 1 cup of strong coffee
- Salt and pepper to taste
Instructions
- Preheat the sous vide to 135°F (57°C).
- Season the short ribs with salt and pepper, then place them in a sous vide bag and seal.
- Cook the short ribs in the sous vide for 24 hours.
- After 24 hours, remove the short ribs from the sous vide and let them rest for 10 minutes.
- While the short ribs are resting, heat a skillet over medium-high heat.
- Sear the short ribs in the skillet for 2-3 minutes on each side, until they develop a nice crust.
- In a small saucepan, bring the coffee to a simmer and reduce it by half to create a glaze.
- Brush the coffee glaze over the seared short ribs.
- In the same skillet, add the asparagus and cook for 3-4 minutes until they are tender-crisp.
- Serve the coffee-glazed short ribs with the asparagus on the side.
