This recipe is a quick and easy low-carb dish that’s perfect for a satisfying dinner. The coffee glaze adds a rich and smoky flavor to the tender short ribs, while the asparagus provides a fresh and healthy side.

Ingredients

  • 4 pieces of short ribs
  • 1 bunch of fresh asparagus
  • 1 cup of strong coffee
  • Salt and pepper to taste

Instructions

  1. Preheat the sous vide to 135°F (57°C).
  2. Season the short ribs with salt and pepper, then place them in a sous vide bag and seal.
  3. Cook the short ribs in the sous vide for 24 hours.
  4. After 24 hours, remove the short ribs from the sous vide and let them rest for 10 minutes.
  5. While the short ribs are resting, heat a skillet over medium-high heat.
  6. Sear the short ribs in the skillet for 2-3 minutes on each side, until they develop a nice crust.
  7. In a small saucepan, bring the coffee to a simmer and reduce it by half to create a glaze.
  8. Brush the coffee glaze over the seared short ribs.
  9. In the same skillet, add the asparagus and cook for 3-4 minutes until they are tender-crisp.
  10. Serve the coffee-glazed short ribs with the asparagus on the side.
