Coffee-Infused Pork Loin with Artichokes

  • 4 pork loins
  • 2 cups of artichoke hearts
  • 1 cup of strong brewed coffee
  • 1 pressure cooker


  1. Season the pork loins with salt and pepper.
  2. In the pressure cooker, sear the pork loins until they are browned on all sides.
  3. Add the artichoke hearts to the pressure cooker.
  4. Pour in the strong brewed coffee over the pork loins and artichokes.
  5. Close the pressure cooker and cook on high pressure for 20 minutes.
  6. Once done, let the pressure release naturally for 10 minutes.
  7. Carefully open the pressure cooker and transfer the pork loins and artichokes to a serving platter.
  8. Serve the coffee-infused pork loin and artichokes with your favorite side dishes.
