Coffee-Infused Pork Loin with Artichokes

Pork loins, Artichoke, coffee, pressure cooker

Ingredients
- 4 pork loins
- 2 cups of artichoke hearts
- 1 cup of strong brewed coffee
- 1 pressure cooker
Instructions
- Season the pork loins with salt and pepper.
- In the pressure cooker, sear the pork loins until they are browned on all sides.
- Add the artichoke hearts to the pressure cooker.
- Pour in the strong brewed coffee over the pork loins and artichokes.
- Close the pressure cooker and cook on high pressure for 20 minutes.
- Once done, let the pressure release naturally for 10 minutes.
- Carefully open the pressure cooker and transfer the pork loins and artichokes to a serving platter.
- Serve the coffee-infused pork loin and artichokes with your favorite side dishes.
