Ingredients

  • 4 bone-in, skin-on chicken breasts
  • 2 tablespoons finely ground coffee
  • 2 tablespoons paprika
  • 2 tablespoons brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine the coffee, paprika, brown sugar, garlic powder, onion powder, salt, and black pepper. Mix well.
  3. Brush the chicken breasts with olive oil on both sides.
  4. Rub the coffee mixture all over the chicken, making sure to get every inch covered. Let it sit for 5 minutes.
  5. Heat a large skillet over medium-high heat. Sear the chicken for 3-4 minutes per side, or until golden brown.
  6. Transfer the chicken to a baking dish and bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Let the chicken rest for a few minutes before serving.
