Ingredients
- 4 bone-in, skin-on chicken breasts
- 2 tablespoons finely ground coffee
- 2 tablespoons paprika
- 2 tablespoons brown sugar
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, combine the coffee, paprika, brown sugar, garlic powder, onion powder, salt, and black pepper. Mix well.
- Brush the chicken breasts with olive oil on both sides.
- Rub the coffee mixture all over the chicken, making sure to get every inch covered. Let it sit for 5 minutes.
- Heat a large skillet over medium-high heat. Sear the chicken for 3-4 minutes per side, or until golden brown.
- Transfer the chicken to a baking dish and bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes before serving.
