Coffee-Rubbed Chicken with Rice

This delicious recipe takes a classic chicken dinner to new heights with the addition of coffee! The coffee rub gives the chicken a rich, smoky flavor that pairs perfectly with fluffy white rice.
Ingredients
- 4 chicken breasts
- 1/4 cup coffee grounds
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp salt
- 1 tsp black pepper
- 2 cups white rice
- 4 cups water
Instructions
- Preheat oven to 375 degrees F.
- In a small bowl, combine coffee grounds, garlic powder, onion powder, paprika, salt, and black pepper. Rub the coffee mixture all over the chicken breasts.
- Place chicken breasts on a baking sheet and bake for 25-30 minutes, or until cooked through.
- While the chicken is cooking, bring 4 cups of water to a boil in a medium-sized pot. Add the rice and reduce the heat to low. Cover and simmer for 18-20 minutes, or until the rice is tender and all the water has been absorbed.
- Serve the coffee-rubbed chicken breasts over a bed of fluffy white rice. Enjoy!
