Cottage Cheese, Celery, lentils, skillet

This dish is a hearty, comforting meal that's perfect for any bloody day of the week. It's packed with protein and flavor, and it's simple enough for even the most clueless home cook to pull off. So, get your act together and let's make some magic in the kitchen!

  • 2 cups of lentils
  • 4 cups of water or vegetable broth
  • 2 cups of cottage cheese
  • 4 stalks of celery, diced
  • 2 tablespoons of olive oil
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

  1. Prep the lentils: Rinse the lentils under cold water. Make sure they're clean, for crying out loud!
  2. Cook the lentils: In a medium pot, bring the water or vegetable broth to a boil. Add the lentils and reduce the heat to a simmer. Cook for about 20-25 minutes or until the lentils are tender. Drain any excess liquid and set aside.
  3. Heat the skillet: While the lentils are cooking, heat the olive oil in a large skillet over medium heat. If you don't know what medium heat is, it's the setting that’s not going to burn your house down.
  4. Cook the aromatics: Add the chopped onion and minced garlic to the skillet. Cook for about 5 minutes, stirring occasionally, until the onion is translucent and the garlic is fragrant. If you burn it, you might as well start over!
  5. Add the celery: Toss in the diced celery and cook for another 5 minutes until it starts to soften. Don’t just stand there, keep an eye on it!
  6. Combine lentils and seasoning: Add the cooked lentils to the skillet. Sprinkle in the dried thyme, and season with salt and pepper. Mix everything well and let it cook for another 5 minutes, allowing all the flavors to meld together.
  7. Finish with cottage cheese: Remove the skillet from heat and stir in the cottage cheese. Make sure it’s evenly distributed, you want every bite to be perfect.
  8. Garnish and serve: If you’re feeling fancy, sprinkle some fresh parsley on top. Serve hot and enjoy!
