Instructions

  2. Cook the lentils: In a medium pot, bring the water or vegetable broth to a boil. Add the lentils and reduce the heat to a simmer. Cook for about 20-25 minutes or until the lentils are tender. Drain any excess liquid and set aside.
  3. Heat the skillet: While the lentils are cooking, heat the olive oil in a large skillet over medium heat. If you don't know what medium heat is, it's the setting that’s not going to burn your house down.
  4. Cook the aromatics: Add the chopped onion and minced garlic to the skillet. Cook for about 5 minutes, stirring occasionally, until the onion is translucent and the garlic is fragrant. If you burn it, you might as well start over!
  5. Add the celery: Toss in the diced celery and cook for another 5 minutes until it starts to soften. Don’t just stand there, keep an eye on it!
  6. Combine lentils and seasoning: Add the cooked lentils to the skillet. Sprinkle in the dried thyme, and season with salt and pepper. Mix everything well and let it cook for another 5 minutes, allowing all the flavors to meld together.
