Comforting Canned Fish and Green Bean Medley

This delightful and comforting dish brings together the rich flavors of canned fish and the crispness of green beans, all cooked to perfection using the sous vide method. Perfect for a cozy family dinner.
Ingredients
- 2 cans of tuna or sardines (your choice)
- 500g fresh green beans, trimmed
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- Fresh parsley, chopped (for garnish)
Instructions
- Fill a large pot with water and bring to a boil.
- Blanch the green beans for 2-3 minutes until they are bright green and slightly tender.
- Drain and immediately plunge them into ice water to stop the cooking process. Drain again and set aside.
- Preheat your sous vide water bath to 130°F (54°C).
- In a large sous vide bag, combine the blanched green beans, canned fish (drained), vegetable oil, minced garlic, lemon zest, and juice.
- Season with salt and pepper to taste.
- Seal the bag using a vacuum sealer or the water displacement method.
- Place the bag in the preheated water bath and cook for 45 minutes.
- Once cooked, carefully remove the bag from the water bath.
- Open the bag and transfer the contents to a serving dish.
- Gently mix to combine all the flavors.
- Sprinkle with freshly chopped parsley.
- Serve immediately and enjoy the comforting, flavorful medley.
