Lentils, Pea, cereal, pressure cooker

This hearty and nutritious stew is perfect for a cozy family dinner. Packed with lentils, peas, and a touch of cereal for added texture, it's a wholesome meal that brings everyone together around the table. Best of all, it's made in a pressure cooker, so you can have a delicious dinner ready in no time!

  • 1 cup lentils (any variety)
  • 1 cup peas (fresh or frozen)
  • 1/2 cup cereal (such as barley or quinoa)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

  1. Prepare the Ingredients: Rinse the lentils and cereal under cold water. Set aside.
  2. Sauté the Vegetables: Set your pressure cooker to the sauté function. Add olive oil, then sauté the onion, garlic, carrots, and celery until they begin to soften, about 5 minutes.
  3. Add the Main Ingredients: Stir in the lentils, peas, cereal, diced tomatoes, and vegetable broth. Add the dried thyme and rosemary, then season with salt and pepper to taste.
  4. Cook Under Pressure: Secure the lid on the pressure cooker and set it to high pressure for 15 minutes. Once the cooking time is complete, allow the pressure to release naturally for 10 minutes before performing a quick release.
  5. Finish and Serve: Carefully open the lid and give the stew a good stir. Taste and adjust seasoning if necessary. Ladle into bowls and garnish with fresh chopped parsley.
