  • 4 large potatoes, peeled and diced
  • 4 heads of bok choy, chopped
  • 1 cup of lentils
  • 1 sous vide bag of vegetable stock
  • Salt and pepper to taste


  1. In a large pot, combine the diced potatoes, chopped bok choy, and lentils.
  2. Place the sous vide bag of vegetable stock in the pot with the vegetables.
  3. Add enough water to cover the vegetables and lentils.
  4. Season with salt and pepper to taste.
  5. Bring the pot to a gentle simmer over medium heat and let it cook for 25-30 minutes, or until the potatoes are tender and the lentils are cooked through.
  6. Serve the comforting stew in bowls and enjoy the heartwarming flavors.
