Comforting Lentil and Potato Stew
What Started it all:
Potato, Bok choy, lentils, sous vide

Ingredients
- 4 large potatoes, peeled and diced
- 4 heads of bok choy, chopped
- 1 cup of lentils
- 1 sous vide bag of vegetable stock
- Salt and pepper to taste
Instructions
- In a large pot, combine the diced potatoes, chopped bok choy, and lentils.
- Place the sous vide bag of vegetable stock in the pot with the vegetables.
- Add enough water to cover the vegetables and lentils.
- Season with salt and pepper to taste.
- Bring the pot to a gentle simmer over medium heat and let it cook for 25-30 minutes, or until the potatoes are tender and the lentils are cooked through.
- Serve the comforting stew in bowls and enjoy the heartwarming flavors.
