Comforting Quinoa and Leek Fritters

What Started it all:
Quinoa, Leek, flour, skillet


  • 1 cup quinoa
  • 2 leeks, finely chopped
  • 1/2 cup flour
  • Salt and pepper to taste
  • Olive oil for frying


  1. Cook the quinoa according to package instructions and let it cool.
  2. In a large bowl, mix the cooked quinoa, chopped leeks, flour, salt, and pepper until well combined.
  3. Heat a skillet over medium heat and add enough olive oil to coat the bottom.
  4. Form the quinoa mixture into small patties and place them in the skillet.
  5. Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy.
  6. Remove from the skillet and place on a paper towel to drain any excess oil.
  7. Serve the fritters warm and enjoy!
