Comforting Roast Bell Pepper Skillet
What Started it all:
Roast, Bell pepper, vinegar (apple cider, balsamic), skillet
Ingredients
- 1 roast
- 2 bell peppers
- 2 tablespoons apple cider vinegar or balsamic vinegar
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat the skillet over medium-high heat.
- Season the roast with salt and pepper.
- Add a drizzle of olive oil to the skillet and sear the roast on all sides until browned.
- Remove the roast from the skillet and set it aside.
- In the same skillet, add the bell peppers and cook until they start to soften.
- Deglaze the skillet with apple cider vinegar or balsamic vinegar, scraping up any browned bits from the bottom.
- Return the roast to the skillet, cover, and let it cook until the roast is tender and the bell peppers are caramelized.
- Slice the roast and serve it with the bell peppers and pan juices.
