Comforting Roast Bell Pepper Skillet

What Started it all:
Roast, Bell pepper, vinegar (apple cider, balsamic), skillet


  • 1 roast
  • 2 bell peppers
  • 2 tablespoons apple cider vinegar or balsamic vinegar
  • Olive oil
  • Salt and pepper to taste


  1. Preheat the skillet over medium-high heat.
  2. Season the roast with salt and pepper.
  3. Add a drizzle of olive oil to the skillet and sear the roast on all sides until browned.
  4. Remove the roast from the skillet and set it aside.
  5. In the same skillet, add the bell peppers and cook until they start to soften.
  6. Deglaze the skillet with apple cider vinegar or balsamic vinegar, scraping up any browned bits from the bottom.
  7. Return the roast to the skillet, cover, and let it cook until the roast is tender and the bell peppers are caramelized.
  8. Slice the roast and serve it with the bell peppers and pan juices.
