Ingredients
- 4 racks of ribs
- 4 zucchinis, sliced
- 1 cup of oats
- 2 tablespoons of olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
- Fresh herbs (like thyme or rosemary) for garnish
Instructions
- Season the ribs with salt and pepper.
- Place them in a sous vide bag, ensuring they are evenly spread.
- Seal the bag and cook in a sous vide water bath at 165°F (74°C) for 12 hours.
- Preheat your oven to 375°F (190°C).
- Toss the sliced zucchinis with olive oil, minced garlic, salt, and pepper.
- Spread them out on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized.
- In a bowl, combine oats with a pinch of salt and a drizzle of olive oil.
- Spread the mixture on a baking sheet and toast in the oven for 10-15 minutes, or until golden and crispy.
- Once the ribs are cooked sous vide, remove them from the bag and pat them dry.
- Preheat a grill or broiler.
- Grill or broil the ribs for a few minutes on each side, until they are nicely browned and caramelized.
- Arrange the roasted zucchini on a serving platter.
- Place the ribs on top of the zucchini.
- Sprinkle the oat crumble over the ribs and zucchini for a delightful crunch.
- Garnish with fresh herbs.
