Corn, Chicken, and Mutton Biryani

Ingredients
- 500g mutton, cut into pieces
- 500g chicken, cut into pieces
- 2 cups basmati rice
- 1 cup sweet corn (fresh or frozen)
- 3 large onions, thinly sliced
- 4 tomatoes, chopped
- 1 cup yogurt
- 4 tablespoons ginger-garlic paste
- 4 green chilies, slit
- 1/2 cup fresh coriander leaves, chopped
- 1/2 cup fresh mint leaves, chopped
- 4 tablespoons ghee or cooking oil
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1 tablespoon red chili powder (adjust to taste)
- Salt to taste
- 4 cups water
Instructions
- Marinate the Meat: In a large bowl, combine the mutton and chicken with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt. Let it marinate for at least 1 hour (or overnight in the refrigerator for better flavor).
- Cook the Meat: In a heavy-bottomed pot, heat ghee or oil over medium heat. Add cumin seeds and let them sizzle. Add the sliced onions and cook until golden brown.
- Add Tomatoes and Green Chilies: Stir in the chopped tomatoes and green chilies, cooking until the tomatoes soften.
- Combine Meat and Cook: Add the marinated mutton and chicken to the pot. Cook on medium-high heat until the meat is browned and cooked through (about 10-15 minutes).
- Add Corn and Herbs: Stir in the sweet corn, chopped coriander, and mint leaves. Cook for an additional 5 minutes.
- Prepare Rice: Meanwhile, rinse the basmati rice under cold water until the water runs clear. In a separate pot, bring 4 cups of water to a boil. Add the rinsed rice, garam masala, and a pinch of salt. Cook until the rice is 70% done (it should still have a bite to it). Drain the rice.
- Layer the Biryani: In the pot with the meat, layer the partially cooked rice over the meat mixture. Do not stir. Cover the pot tightly with a lid or aluminum foil to trap the steam.
- Dum Cooking: Reduce the heat to low and let the Biryani cook on 'dum' (steam) for about 20-25 minutes. This allows the flavors to meld together.
- Serve: Once done, gently fluff the Biryani with a fork. Serve hot with raita (yogurt sauce) or salad on the side.
