- 200g fresh clams, cleaned
- 1 medium potato, peeled and diced
- 1 small onion, finely chopped
- 1 celery stalk, finely chopped
- 1 garlic clove, minced
- 200ml vegetable or fish stock
- 150ml heavy cream
- 1 tablespoon butter
- Salt and freshly ground black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- In a medium pot, melt the butter over medium heat. Add the chopped onion and celery, sautéing until they are soft and translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute, allowing the flavors to meld.
- Add the diced potato to the pot, followed by the vegetable or fish stock. Bring to a gentle simmer and cook for about 10-15 minutes, or until the potatoes are tender.
- While the potatoes are cooking, in a separate pot, add the cleaned clams and a splash of water. Cover and steam over medium heat until the clams open, about 5 minutes. Discard any that do not open.
- Once the potatoes are cooked, stir in the heavy cream and the steamed clams, allowing everything to heat through. Season with salt and freshly ground black pepper to taste.
