Creamy Ham and Vegetable Soup

Ingredients

  • 4 carrots, peeled and diced
  • 4 tomatoes, diced
  • 4 potatoes, peeled and cubed
  • 200g ham, diced
  • 1 liter vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced carrots and cook for 5 minutes, until slightly softened.
  3. Stir in the diced tomatoes and cook for another 2 minutes.
  4. Add the diced potatoes, ham, and vegetable broth to the pot. Bring to a boil.
  5. Reduce the heat to low and let the soup simmer for 20 minutes, or until the potatoes are tender.
  6. Using an immersion blender or a regular blender, puree the soup until smooth.
  7. Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.
  8. Heat the soup over low heat until warmed through.
  9. Serve the creamy ham and vegetable soup hot, garnished with fresh parsley.
