Creamy Ham and Vegetable Soup
What Started it all:
carots, tomato, potatoes, ham.

Ingredients
- 4 carrots, peeled and diced
- 4 tomatoes, diced
- 4 potatoes, peeled and cubed
- 200g ham, diced
- 1 liter vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, melt the butter over medium heat.
- Add the diced carrots and cook for 5 minutes, until slightly softened.
- Stir in the diced tomatoes and cook for another 2 minutes.
- Add the diced potatoes, ham, and vegetable broth to the pot. Bring to a boil.
- Reduce the heat to low and let the soup simmer for 20 minutes, or until the potatoes are tender.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.
- Heat the soup over low heat until warmed through.
- Serve the creamy ham and vegetable soup hot, garnished with fresh parsley.
