Creamy Mushroom Stroganoff Recipe

  • 2 cups Greek Yogurt
  • 2 cups Mushrooms, sliced
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 1 tbsp all-purpose flour
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup vegetable broth
  • 8 oz pasta of your choice


  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are golden brown.
  4. Srinkle the flour over the mushrooms and stir to combine.
  5. Gradually pour in the vegetable broth, stirring constantly until the sauce thickens.
  6. Reduce the heat and stir in the Greek yogurt. Simmer gently for 5 minutes.
  7. Meanwhile, cook the pasta according to the package instructions.
  8. Season the stroganoff with salt and pepper to taste.
  9. Serve the creamy mushroom stroganoff over the cooked pasta.
  10. Garnish with chopped fresh parsley before serving.
