This creamy and flavorful dish combines tender orzo, succulent chicken, and a delightful blend of cheeses, all baked to perfection. A comforting and satisfying meal for two!


  • 1/2 cup Mire poix (diced onion, carrot, and celery)
  • 1/2 cup orzo
  • 1 1/2 cups chicken broth
  • 1/2 cup cream of chicken soup
  • 1 cup chopped chicken
  • 1/2 cup frozen spinach
  • 1/2 cup mozzarella, shredded
  • 1/4 cup Parmesan, grated
  • 2 tablespoons pesto


  1. 1. Preheat the oven to 375°F (190°C).
  2. 2. In a skillet, sauté the mire poix until softened.
  3. 3. Add the orzo and continue to cook for 2-3 minutes.
  4. 4. Stir in the chicken broth and cream of chicken soup, then bring to a simmer.
  5. 5. Add the chopped chicken and frozen spinach, cooking until the chicken is no longer pink.
  6. 6. Stir in the mozzarella, Parmesan, and pesto until well combined.
  7. 7. Transfer the mixture to a baking dish.
