  • 100 g parmesan cheese, grated
  • 4 precooked chicken drumsticks
  • 1 medium zucchini, diced
  • 1 medium eggplant, diced
  • 200 g cherry tomatoes, halved
  • 200 g shredded cheese mix
  • 1 large egg
  • 50 g all-purpose flour
  • 30 g butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced zucchini and eggplant, and sauté for about 5-7 minutes until they are tender. Season with salt and pepper.
  3. In a large bowl, combine the cream, mushroom sauce, tomato soup, and the egg. Whisk together until smooth. Stir in the flour to thicken the sauce slightly.

  5. In a greased baking dish, spread half of the vegetable and bean mixture evenly. Place the precooked chicken drumsticks on top, then cover with the remaining vegetable and bean mixture. Sprinkle the shredded cheese mix and the rest of the parmesan cheese on top.
  6. Place the baking dish in the oven and bake for 25-30 minutes or until the cheese is bubbly and golden brown.
