Crispy Air Fryer Black Bean and Avocado Rice

Ingredients

  • 1 cup of rice
  • 1 can of black beans, drained and rinsed
  • 2 ripe avocados, sliced
  • Salt and pepper to taste
  • Cooking spray for the air fryer

Instructions

  1. Cook the rice according to package instructions and set aside.
  2. Preheat the air fryer to 400°F (200°C).
  3. In a mixing bowl, gently combine the cooked rice and black beans. Season with salt and pepper to taste.
  4. Lightly spray the air fryer basket with cooking spray to prevent sticking.
  5. Spread the rice and black bean mixture evenly in the air fryer basket.
  6. Air fry for 10-12 minutes, shaking the basket halfway through, until the rice is crispy and the black beans are heated through.
  7. Once done, transfer the crispy rice and black beans to a serving platter.
  8. Arrange the sliced avocado on top of the crispy rice and black beans.
  9. Serve immediately and enjoy this healthy and delicious dish with family and friends!
