Crispy Cod with Potato Mayo

Ingredients
- 4 cod fillets
- 4 medium-sized potatoes
- 1 cup mayonnaise
- Salt and pepper to taste
- Vegetable oil for frying

- Start by boiling the potatoes in a large pot of salted water until they are tender. Drain and set aside to cool.
- While the potatoes are cooling, season the cod fillets generously with salt and pepper on both sides.
