- 1 teaspoon paprika
- 1 teaspoon dried rosemary (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the potatoes. Cut them into evenly sized chunks, approximately 1-inch pieces.
- In a large bowl, combine the potato chunks, olive oil, salt, black pepper, garlic powder, paprika, and dried rosemary (if using). Toss until the potatoes are evenly coated with the seasoning.
- Spread the seasoned potatoes out in a single layer on a baking sheet. Make sure they are not overcrowded to ensure even roasting.
- Place the baking sheet in the preheated oven and roast for 25-30 minutes. Halfway through cooking, flip the potatoes to ensure they roast evenly on all sides.
- The potatoes are done when they are golden brown and crispy on the outside and tender on the inside. You can test this by piercing a piece with a fork; it should go through easily.
- Once done, remove the baking sheet from the oven. Transfer the potatoes to a serving dish and garnish with chopped fresh parsley.
