Crockpot Artichoke and Bacon Stew

  • 1 large onion, chopped
  • 6 slices of bacon, diced
  • 2 large artichokes, peeled and chopped
  • 2 cloves of garlic, minced
  • 1 cup of all-purpose flour
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 1/4 cup of chicken broth
  • 1/4 cup of water


  1. Cook the bacon in a pan over medium heat until crispy, then set aside.
  2. In the same pan, add the chopped onion and cook until translucent.
  3. Add the minced garlic and cook for an additional minute.
  4. Add the chopped artichokes, paprika, salt, and pepper. Cook for 2-3 minutes or until the artichokes are tender.
  5. In a separate bowl, mix together the flour, chicken broth, and water. Stir until smooth.
  6. Add the flour mixture to the pan and stir until combined.
  7. Add the cooked bacon back into the pan and stir until well combined.
  8. Transfer the mixture to a crockpot and cook on low for 4-5 hours or until the flavors have melded together.
  9. Serve hot and enjoy!
