Crockpot Fennel and Chia Seed Soup

This is a simple yet flavorful Italian-inspired soup that’ll knock your socks off! Perfect for a cozy dinner, this recipe uses fennel bulb and chia seeds for a unique twist.


  • 2 fennel bulbs, thinly sliced
  • 2 tablespoons chia seeds
  • 4 cups chicken or vegetable broth (your choice, but don't screw it up!)
  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional, but come on, don’t be lazy!)


  1. Heat the olive oil in a pan over medium heat. Add the chopped onion and minced garlic. Sauté until they’re soft and fragrant. Don’t burn it, for heaven’s sake!
  2. Transfer the sautéed onions and garlic to the crockpot. Add the thinly sliced fennel bulbs. Pour in the broth, and give it a good stir.
  3. Set the crockpot to low and let it cook for 6-7 hours or until the fennel is tender and flavors have melded together. About 15 minutes before serving, stir in the chia seeds. Season with salt and pepper to taste. Taste it, don’t just guess!
  4. Ladle the soup into bowls and garnish with fresh parsley if you have any sense of presentation.
