Ingredients

- 1/2 cup fresh mint leaves, chopped

- 2 large tomatoes, chopped
- 1 onion, finely chopped

- 1 teaspoon cumin seeds
- 1 tablespoon olive oil

Instructions
- Preheat your oven to 200°C (400°F).
- Wash and peel the potatoes. Cut them into thin wedges or sticks.
- In a large bowl, toss the potato wedges with olive oil, curry powder, paprika, and salt until evenly coated.
- Spread the chips on a baking tray lined with parchment paper in a single layer.
- Bake for 30-35 minutes, turning halfway through, until golden and crispy.
- In a bowl, combine the yogurt, chopped mint leaves, lemon juice, salt, and pepper.
- Mix well and adjust seasoning to taste. Set aside.
- Heat olive oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion and sauté until translucent.
- Stir in the chopped tomatoes and green chilies. Cook until the mixture thickens, about 10-15 minutes.

- Arrange the chips on a large platter, sprinkle with fresh coriander, and serve with the mint yogurt dip and spicy tomato chutney on the side.
