Ingredients
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup cold sparkling water
- Vegetable oil (for frying)
- 1 cup Paola Paldea sauce (or substitute with a very sweet fruit syrup)
- Powdered sugar (optional)
- Fresh mint leaves (optional)
Instructions
- In a saucepan, combine the milk, sugar, cornstarch, vanilla extract, and salt.
- Cook over medium heat, stirring constantly until the mixture thickens and boils.
- Allow it to boil for 1 minute while continuing to stir.
- Remove from heat, pour into a shallow dish, and let it cool. Once cooled, refrigerate for at least 2 hours until firm.
- Once the pudding is firm, cut it into 8 equal squares.
- Place the squares on a baking sheet lined with parchment paper and freeze for at least 1 hour.
- In a mixing bowl, combine the flour, cornstarch, baking powder, and salt.
- Gradually add the cold sparkling water, whisking until the batter is smooth.
- In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).
- Remove the pudding squares from the freezer.
- Dip each square into the batter, ensuring it is fully coated.
