Delicious Baked Salmon with Cucumber Rice

Ingredients

  • 4 salmon fillets
  • 1 cucumber, thinly sliced
  • 2 tablespoons olive oil
  • 2 cups of rice
  • Water for the rice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the rice in the rice cooker and add water according to the cooker's instructions. Let it cook while you prepare the salmon.
  3. Place the salmon fillets on a baking tray lined with parchment paper.
  4. Drizzle the olive oil over the salmon and season with salt and pepper to taste.
  5. Arrange the thinly sliced cucumber on top of the salmon fillets.
  6. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and the cucumber is slightly crispy.
  7. Once the rice is done, fluff it up with a fork and serve alongside the baked salmon and cucumber.
