Delicious Gluten-Free Tofu and Chard Pasta

Ingredients
- 400g gluten-free pasta
- 300g firm tofu, cubed
- 200g fresh chard, chopped
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon chili flakes (optional)
- Salt and pepper to taste
- Fresh lemon juice (from 1 lemon)
- Grated Parmesan cheese or nutritional yeast for serving (optional)
Instructions
- In your pressure cooker, heat the olive oil over medium heat. Add the cubed tofu and sauté until golden brown on all sides. This should take about 5-7 minutes.
- Toss in the minced garlic and chili flakes, stirring for about 1 minute until fragrant.
- Add the chopped chard to the pressure cooker. Season with salt and pepper, and stir until wilted, which should take about 3-4 minutes.
- In a separate pot, boil salted water and cook the gluten-free pasta according to package instructions. Once done, drain and reserve a cup of pasta water.
- Add the cooked pasta to the pressure cooker with the tofu and chard. Pour in a little reserved pasta water to help combine everything and add moisture. Squeeze fresh lemon juice over the top and toss gently.
- Plate up your delicious pasta, and if you fancy, sprinkle with grated Parmesan cheese or nutritional yeast for that extra flavor kick.
