Easy Chinese Beef and Tomato Skillet

Ingredients
- 1 pound stew beef
- 2 tomatoes, sliced
- 2 tablespoons mayonnaise
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Cooked rice, for serving
Instructions
- Heat the vegetable oil in a skillet over medium-high heat.
- Add the stew beef to the skillet and cook until browned on all sides.
- Add the sliced tomatoes to the skillet and cook for 3-4 minutes, until they start to soften.
- Season the beef and tomatoes with salt and pepper to taste.
- Stir in the mayonnaise and cook for an additional 2-3 minutes, until everything is heated through and well combined.
- Serve the beef and tomato skillet over cooked rice.
